{"id":224,"date":"2023-11-01T11:05:30","date_gmt":"2023-11-01T11:05:30","guid":{"rendered":"https:\/\/davefoodstories.com\/?p=224"},"modified":"2023-11-15T15:06:15","modified_gmt":"2023-11-15T15:06:15","slug":"risotto-with-dried-porcini-mushrooms","status":"publish","type":"post","link":"https:\/\/davefoodstories.com\/index.php\/2023\/11\/01\/risotto-with-dried-porcini-mushrooms\/","title":{"rendered":"Porcini Mushroom Risotto"},"content":{"rendered":"\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe loading=\"lazy\" title=\"Porcini Mushroom Risotto\" width=\"720\" height=\"405\" src=\"https:\/\/www.youtube.com\/embed\/DN-xeoSHD70?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<p>Creamy italian risotto with dried porcini mushroom.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><br>Vegetable stock:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 onion<\/li>\n\n\n\n<li>1 carrot<\/li>\n\n\n\n<li>1 stick of celery<\/li>\n\n\n\n<li>1 liter (4 cups) of water<\/li>\n\n\n\n<li>salt<\/li>\n<\/ul>\n\n\n\n<p>Vegetable stock:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>160 gr (5.6 oz) Carnaroli rice<\/li>\n\n\n\n<li>1 shallot<\/li>\n\n\n\n<li>25 gr (0.9 oz) dried porcini mushrooms<\/li>\n\n\n\n<li>20 gr (0.7 oz) Parmigiano Reggiano<\/li>\n\n\n\n<li>30 gr (1 oz) butter<\/li>\n\n\n\n<li>half glass of white wine<\/li>\n\n\n\n<li>parsley<\/li>\n\n\n\n<li>extra virgin olive oil<\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>for the vegetable stock, peel the carrot and divide the vegetables into large pieces<\/li>\n\n\n\n<li>put the carrot, onion and celery in a pot.<\/li>\n\n\n\n<li>add 1 liter of water, turn on the heat and bring to the boil<\/li>\n\n\n\n<li>while the stock is cooking, soak the dried mushrooms in warm water<\/li>\n\n\n\n<li>toast the rice for 2 minutes and keep it aside<\/li>\n\n\n\n<li>finely chop the shallot<\/li>\n\n\n\n<li>after 45\/60 minutes the stock is ready to be filtered<\/li>\n\n\n\n<li>drain the mushrooms, add the remaining water to the vegetable stock and season with salt<\/li>\n\n\n\n<li>put it back on the heat<\/li>\n\n\n\n<li>heat 2 tbsp olive oil in a saucepan and light fry the shallot<\/li>\n\n\n\n<li>add the rice and shortly after the squeezed porcini mushrooms<\/li>\n\n\n\n<li>deglaze with white wine<\/li>\n\n\n\n<li>add the stock little by litthe and cook the rice<\/li>\n\n\n\n<li>once cooked, turn off the heat and let it rest for a couple of minutes, covering with a lid<\/li>\n\n\n\n<li>\u2022 in the end stir with cold butter and Parmigiano Reggiano<\/li>\n\n\n\n<li>\u2022 add the chopped parsley and serve<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Creamy italian risotto with dried porcini mushroom.
